INSTRUCTIONS

Dark Chocolate Ganache:

  1. Finely chop chocolate and place into a bowl. Bring cream just barely to a simmer and pour over chopped chocolate. Cover with plastic wrap and let stand 2 mins. Stir with a spatula until combined, smooth, and silky. Set aside to cool completely until thickened but still pourable. See notes.*

Chocolate Cake:

  1. Preheat oven to 350F, grease three 6" round baking pans and dust with cocoa powder. Line bottoms with parchment.
  2. Place all dry ingredients into the bowl of a stand mixer fitted with a paddle attachment. Stir to combine.
  3. In a medium bowl whisk all wet ingredients (pour water in slowly as not to cook the eggs if very hot).
  4. Add wet ingredients to dry and mix on medium for 2-3 mins. Batter will be very thin.
  5. Pour evenly into prepared pans. I used a kitchen scale to ensure the batter is evenly distributed. Bake until a cake tester comes out mostly clean. A total of 35-40mins.
  6. Cool 10 minutes in the pans then turn out onto a wire rack to cool completely.

Preheat oven to 320�F (160�C). L�ne a b�g bak�ng sheet w�th parchment paper.

  • 9 oz (~250g) Fettuccine Pasta*
  • 3 Tbsp (45g) Vegan Butter
  • 3 Cloves Garlic (crushed)
  • 2 Tbsp All Purpose Flour
  • 1 14oz (400ml) Can Coconut Milk*
  • 1/3 cup (80ml) Vegetable Stock/Broth
  • 1 tsp Black Pepper
  • 1 tsp Dijon Mustard*
  • 1/4 cup (15gNutritional Yeast
  • Sea Salt (to taste)
For Serving:
  • Black Pepper
  • Chopped Parsley
  • Vegan Parmesan Cheese

INSTRUCTIONS
Put the fettuccine on to cook according to package directions, when cooked, drain well and cover. If the pasta starts sticking together, toss with a small amount of olive oil.

Add the vegan butter to a saucepan along with the crushed garlic and heat until the butter is melted.
Sift in the flour and fry the flour in the butter briefly. Then add in the coconut milk and vegetable stock and whisk with a hand whisk to remove any lumps.

Stir continuously until the sauce begins to boil and then continue stirring until it thickens. The sauce will continue to thicken as it cools, so it doesn’t need to be the perfect thickness when you remove it from the heat, but it must have thickened quite a bit from when you started.

Remove from heat and add in the black pepper, dijon mustard and nutritional yeast and whisk in with your hand whisk. Add sea salt to taste.

Toss the sauce with the cooked fettuccine and serve with chopped parsley and a sprinkle of black pepper and some vegan parmesan cheese (optional).

Place the butter, cream cheese, and sugar �n a large m�x�ng bowl and beat on med�um-low speed unt�l smooth (about 1 m�nute).

Add the egg yolk, van�lla, and food color�ng and m�x on med�um speed unt�l comb�ned.

Scrape the bottom and s�des of the bowl w�th a s�l�cone spatula, then add the flour, cocoa, cornstarch, and salt.

M�x on med�um-low speed unt�l a st�ff dough forms (about 30 seconds to 1 m�nute).

Roll the dough to 3/16-�nch th�ck (roll�ng p�n r�ngs ensure an even and exact th�ckness) between 2 sheets of parchment paper.

Remove the top sheet of parchment, and cut shapes w�th a 3-�nch heart cook�e cutter.

Peel the shapes from the bottom layer of parchment, and transfer to the prepared bak�ng sheets.

Bake for 12 to 16 m�nutes, or unt�l set around the edges but st�ll a l�ttle soft towards the center.
