  • � cup almond flour
  • � cup coconut flour
  • 1 teaspoon baking powder
  • � teaspoon sea salt

  3. In a separate bowl, using an electric mixer, beat egg whites on high speed until soft peaks form-- around 3 minutes.
  4. Add the egg whites to the flour mixture and stir until completely combined. When combining the egg whites, don�t use a food processor or hand blender to mix as it may affect the biscuit texture. Use an electric beater on the lowest setting just for a few seconds if you need to get lumps out. Your egg whites will fall completely -- this is expected.
  5. Allow dough to sit for five minutes as the coconut flour will absorb liquid. You want your finished dough to be the consistency of good oatmeal -- not too thin and not gluey. If too thin, add coconut flour 1 tablespoon at a time and give it a few minutes to thicken appropriately before adding any more. 
  6. Using a muffin scoop or spoon, drop biscuits onto parchment paper at least one inch apart. 
  7. Put in the oven and bake. After about 10 minutes, brush the tops of the paleo biscuits with melted butter if desired. Bake another 5-10 minutes or until the tops are golden brown and a toothpick comes out clean.

  • 1 medium spaghetti squash (approx. 2-3lbs)
  • 2.5 TBSP minced garlic

  2. Slice your spaghetti squash in half lengthwise and scoop out the seeds.
  3. For easy cutting, feel free to stick your squash in the microwave to soften it up just a tad. Pierce it a few times with a knife (to help vent so it doesn't burst) and cook for for 3-5 minutes. The knife slides through way easier this way! Smaller squash will need about 3 minutes while larger ones will be good to go at 4-5 min.
  4. Next grab a lipped baking sheet or a rimmed baking dish.
  5. Rub the cut side of the squash with a teeny bit of olive oil and place on your baking dish/sheet cut side down. Roast for about 40 minutes, or until tender and easily pierced with a fork. Cooking time will vary a bit depending on the size of your squash, and larger squash will need to roast a bit longer to tenderize. Once ready, the once rock-hard exterior of the squash will be visibly softened with a tender interior.
  6. The squash can be roasted and stored in the fridge for a few days if you'd like to meal prep and plan ahead for a speedier dinner.
  7. While the squash roasts, start on the sauce.
  8. In a medium pot or skillet, bring a drizzle of olive oil to medium-high heat and saut� garlic until fragrant.
  9. Next add the spinach and stir until wilted. Add your cream, cream cheese (totally optional but totally tasty) and parmesan cheese and stir well.
  10. Season with salt and pepper to taste and remove from heat.
  11. Once squash is done roasting, allow to cool until easily handled or pop on an oven mit and use a fork to separate and fluff the strands of spaghetti squash.
  12. Pour your sauce over each squash boat, stir to mix, and top with a little mozzarella cheese and additional parm cheese, if desired.
  13. Bake at 350 degrees F for around 20 minutes or until hot and bubbly.
  14. For a golden cheesy topping, flip your oven to broil on high for just a minute or two until lightly browned. Dive in while it's HOT!

  1. Preheat the oven to 325 degrees F.
  2. Before you begin mixing the filling, be sure the spinach is very well drained, and squeeze out any excess liquid by hand.
  3. To make the filling: In a mixing bowl, add the spinach and the remaining filling ingredients. Stir until all is well-combined.
  4. Unroll the phyllo (fillo) sheets and place them between two slightly damp kitchen cloths.

  7. Now, evenly spread the spinach and feta filling over the phyllo (fillo) crust. Top with two more sheets, and brush with olive oil.
  8. Continue to layer the phyllo (fillo) sheets, two-at-a-time, brushing with olive oil, until you have used up all the sheets. Brush the very top layer with olive oil, and sprinkle with just a few drops of water.
  9. Fold the flaps or excess from the sides, you can crumble them a little. Brush the folded sides well with olive oil. Cut Spanakopita ONLY PART-WAY through into squares, or leave the cutting to later.
  10. Bake in the 325 degrees F heated-oven for 1 hour, or until the phyllo (fillo) crust is crisp and golden brown. Remove from the oven. Finish cutting into squares and serve. Enjoy!

Directions :

  1. Preheat your oven to 350 degrees Fahrenheit. 
  2. While the oven is preheating, cut your spaghetti squash in half. Once it is cut in half (the hardest part of this recipe!), scoop out the insides. 
  3. Next, make the taco seasoning. Add all taco seasoning ingredients to a small dish and mix together well. Set aside. 
  4. Lightly spray each half of the spaghetti squash with avocado oil spray (optional). Sprinkle 1 teaspoon (total) of the finished taco seasoning on both halves of the spaghetti squash. 
  5. Once the oven is preheated, lay both halves of the squash flat side down on a pan. Bake for approximately 40 minutes, depending on the size of your squash. You know the squash is done with the sides pull away easily from the sides with a fork. 
  6. While the squash is roasting, prepare the insides. Heat a large skillet to medium heat. Add the diced onion and saute until soft and translucent, about 6-7 minutes. If the onions begin to stick, add water or vegetable broth 1 tablespoon at a time. (You can view our video here on how to cook onions with this method.)
  7. Add the minced garlic and saute until the garlic becomes fragrant, about 1 minute. Next, add the red pepper, corn, black beans, chickpeas, tomatoes, and the remainder of the taco seasoning. Cook about 8-10 minutes, until the pepper softens. Stirring frequently. 
  8. When the squash is done, scrape the insides of the squash with a fork, creating the �spaghetti�. Add the squash to the cooked insides and stir until well mixed. 
  9. Add the juice of one lime. Taste and season with salt, pepper, or other seasonings if desired. Add a heaping scoop of the prepared inside to each squash boat. Serve with diced avocado, cilantro, and extra lime. Enjoy!

  7. Gently press the lollipop stick into the pie dough, making sure it's indented slightly into the dough. There should be at least 1 inch of lollipop stick pressed into the dough.
  8. Add a small spoonful of pumpkin mixture to the center of the shape, over the lollipop stick, being sure to leave at least half an inch of space around the outer edges of the pumpkin shape to seal it closed.
  9. Line up the other half of the pumpkin shapes on top of the bottom pumpkin shape and the pumpkin mixture. Press the edges closed slightly with your fingers.
  10. Using a fork, press around the edges of the pumpkin shape to seal it completely.
  11. Brush the top of the pumpkins with the beaten egg.
  12. Bake at 350F for 20 to 25 minutes until golden brown. (I baked mine for 23 minutes).

You can either transfer to a slow cooker and cook over low for 4 hours or high for 2 hours, or cook it on the stove top by bringing it to a boil, then cover and reduce heat to low and cook for 20 more minutes.
  3. Remove the lid, and either use an immersion blender or stand blender (careful when blending hot liquids in a stand blender!). Blend until the soup is creamy. Then stir in the parmesan cheese and heavy cream. Heat soup for another 5-10 minutes, or until the cheese is melted and the soup is warm. Taste for salt and pepper. Serve warm.
  4. Leftovers will keep for 1 week in an airtight container. Freezes beautifully. See notes for freezing tips.

  6. Add the veggies and sun dried tomatoes in, and toss to coat. Garnish with fresh thyme, parsley, or basil.
  7. This pasta is just as delicious the next day. The leftovers keep very well.
