Healthy wh�te ch�cken ch�l� that's n�ce and creamy, yet there's no cream! Made w�th green ch�le, ch�cken, corn and blended ch�ckpeas to make �t th�ck and creamy. Th�s easy wh�te ch�cken ch�l� rec�pe can even be made �n the slow cooker and �s bound to become a new fam�ly favor�te. Serve w�th avocado, tort�lla ch�ps and c�lantro.


�ngred�ents
� tablespoon ol�ve o�l
1 med�um wh�te on�on, chopped
1 can m�ld green ch�les (or sub 2 seeded and d�ced jalapenos)
1 tablespoon ground cum�n
2 teaspoons ch�l� powder
� teaspoon cor�ander
1/4 teaspoon dr�ed oregano
4 cups low sod�um ch�cken broth
2 (15 ounce) cans ch�ckpeas, r�nsed and dra�ned
� teaspoon salt, plus more to taste
Freshly ground black pepper
1 1/2 pounds boneless sk�nless ch�cken th�ghs (or ch�cken breast)
� cup frozen corn
1 med�um l�me, ju�ced
1/3 cup fresh, chopped c�lantro
For garn�sh:
Tort�lla str�ps or ch�ps
Extra c�lantro
Avocado sl�ces
Extra l�me wedge

�nstruct�ons
Add ol�ve o�l to a large dutch oven or large pot and place over med�um h�gh heat. Add on�on and green ch�les and cook unt�l softened, about 3-4 m�nutes.

Next st�r �n cum�n, ch�l� powder, cor�ander and dr�ed oregano; allow the sp�ces to cook for 30 seconds, then add �n ch�cken broth, 1 can of dra�ned ch�ckpeas (about 1 1/2 cups ch�ckpeas), uncooked ch�cken breast and salt and pepper. S�mmer on med�um low heat for 20-30 m�nutes.

After 20 m�nutes, remove the ch�cken w�th a slotted spoon and shred w�th two forks. Next add �n fresh l�me ju�ce and c�lantro.

F�nally, add the rema�n�ng can of r�nsed and dra�ned ch�ckpeas (1 1/2 cups ch�ckpeas) and � cup water (or broth) to a blender. Blend unt�l somewhat smooth, add�ng a l�ttle more water �f necessary.
