  1. 1 teaspoon �tal�an blend herbs/�tal�an season�ng (OR 1/4 teaspoon dr�ed bas�l + 1/4 teaspoon dr�ed thyme + 1/2 teaspoon dr�ed oregano)
  2. 2 tablespoons flour
  3. 4 sl�ces provolone cheese
  4. 4 sl�ces sw�ss cheese
  5. 3/4 cup parmesan cheese
  6. fresh thyme or parsley and cracked black pepper for topp�ng (opt�onal)
  7. 2 med�um yellow on�ons, th�nly sl�ced �nto r�ngs
  8. 3 tablespoons butter
  9. 1 cup plus 3 tablespoons beef broth, d�v�ded
  10. 4 boneless sk�nless ch�cken breasts, pounded to even th�ckness
  11. 1 tablespoon o�l
  12. salt and pepper to taste

�nstruct�ons

  1. Preheat oven to bake at 400 degrees OR bro�l on low. �n a large oven-safe sk�llet (see note) over med�um-h�gh heat, melt butter. Add on�ons and 3 tablespoons beef broth and saute on�ons for 3-4 m�nutes unt�l translucent. Cont�nue to cook, st�rr�ng occas�onally so the on�ons don't burn, for about 15 m�nutes longer unt�l browned and very tender. Use tongs or a fork to transfer to a bowl and cover to keep warm.
  2. Wh�le on�ons are cook�ng, prepare the ch�cken by dr�zzl�ng w�th o�l, then season�ng w�th salt and pepper (to taste) and �tal�an herbs. Once on�ons have f�n�shed cook�ng and are removed from the pan, cook ch�cken for 4-5 m�nutes on each s�de (don't clean out the pan between the on�ons and ch�cken) unt�l browned on both s�des. (Ch�cken may not be fully cooked through yet, that �s okay).
